Mess Sergeant (824) Enlisted Personnel

Supervises and controls the activities of mess personnel in garrison or field kitchen installations.
Prepares menus from a master menu. Supervises the preparation of food in accordance with established sanitary and dietetic principles. Makes authorized requisitions and purchases of supplies. Inspects delivered supplies for condition and proper quantity and inspects stored food for spoilage. Keeps records of supplies, equipment, and mess account.
Must have sufficient knowledge of dietetics to maintain a balanced diet. Must be able to direct and control the preparation of palatable meals under unfavorable field conditions. Must be familiar with Army methods of accounting and inventory as they apply to food.
